Quinoa Chili Cups



Do you guys put quinoa in everything?

Is it just me?

We mix it up with stuffed peppers, chili, meats, veggies... 

Quinoa is SO good for you - here are some stats

If you're getting ready for the big game - this is a snack that is SURE to satisfy, will fill you up, AND is good for you too :) 


Quinoa Chili Cups
We use organic, fair trade, and or local ingredients
1 pack of corn tortillas


Olive oil
2 tbs butter

3 carrots, shredded
1 cup of spinach, chopped
1 cup onion, chopped

1 (or a little more) cups of cooked quinoa.

1 can of beans (your favorite kind, we use kidney)

1 stick of cheddar cheese, shredded

2 tsp chili powder (we like things spicy – so lessen it if you don’t!)
1/2 tsp cumin
2 tsp paprika
1 tsp onion powder
1 tsp garlic powder
Salt and pepper

Toppings of your choice:
Cheese
Hot sauce
Salsa
Sour Cream
Avocados
Diced tomatoes

Pre-heat oven to 400.

Spray a muffin tin.

Slice tortillas into 4 triangles each.  Arrange two or three of them into the bottom of each cup of a muffin tin (two would fit into a mini muffin tin, three for a regular one - they don't need to be perfect, or even cover the entire cup, it's ok if they break/split, the chili and cheese will keep it together in the end).  Put a small dab of butter on top of each arrangement.  

Cook the tortillas until they start to get brown and crispy, remove from the oven and set aside.

Brown beef in olive oil.  When browned, add veggies and spices.  Cook until the onions are translucent.  Add in beans, quinoa, and HALF of your shredded cheese. 

Spoon mixture into muffin tin (on top of the little tortilla cups).

Top with enchilada sauce if you like it and the rest of the cheese.


Bake until cheese is melty and brown, and cups are firm.

Remove and top with your toppings!
