Apple Chicken Salad


Nothing funny today.

Just delicious chicken salad.

Seriously delicious.

Apple Chicken Salad
We use all organic, fair trade, and or local ingredients.

1 Whole Chicken (mine was about 4 pounds)
The biggest pot you have filled up with water
3 peeled carrots, roughly chopped
1 onion, roughly chopped
6 stalks of celery, 3 roughly chopped, 3 finely chopped with strings removed
4 apples, 2 roughly chopped, 2 finely chopped
1/4 cup BRAGG apple cider vinegar (it matters)
2 cups of mayonnaise 
Rosemary
Garlic Powder
Onion Powder
Paprika
Parsley
Thyme
Black Pepper
Sea Salt
Olive Oil

Rinse up your chicken and boil it with your roughly chopped veggies, apple cider vinegar, and about a teaspoon of each spice (use your discretion - I use less black pepper, more onion and garlic powder - but use what you like).

Cook the chicken until the meat is falling off the bones.  It took about 2 hours.

Take chicken out and tear it with two forks.  Throw all bones and waste back into the water and boil over night for stock :)

Let chicken cool and add finely chopped veggies and a bit more of each spice.  I use about 1/4 teaspoon of each (again less black pepper).  Mix in 2 cups of mayo *note I like a lot of mayo - add a cup first and mix well - you may like it with just a cup.

We enjoy it on this DELICIOUS bread.  It is worth the two days it takes to make it.  I promise!
